recipe: grandmas meatballs

I am so excited to have a BLOG! Somewhere to share my favorites, recipes, travel details and everything in between! I want to start with a favorite recipe that I know you will love! This is my Grandmas meatballs and sauce and a favorite of everyone I have every made it for. 

We love eating these meatballs with pasta for dinner but leftovers are great for sandwiches, with eggs or as is!

Here is the recipe:

Grandmas meatballs


Prep time: 15 min Cook time: 60 min 

Ingredients:

½ C ground beef

½ C ground veal

½ C ground pork

2 eggs, beaten

4 garlic cloves, minced

½ C parsley, chopped

½ C Italian breadcrumbs

¼ C parmesan, grated

Garnish:

2 C mozzarella, shredded

1 C ricotta cheese

Parsley

Directions:

  • Gently mix meat, garlic, breadcrumbs, olive oil, eggs, parmesan and parsley. No need to overwork the meat, just mix until combined.

  • Roll into balls, about 1-2 inches big.

  • Heat a large pan with olive oil and brown meatballs in batches, they will not be cooked through.

  • Add your browned meatballs into the warm sauce, and simmer for 30-40 minutes

  • While the meatballs cook, prepare your pasta according to package directions.

  • Drain the pasta, mix with your sauce and meatballs, top with fresh ricotta and mangia!


The sauce is one of the best parts, here is how to make it:

Grandmas Marinara

Ingredients:

56 oz crushed tomato (I always recommend using San Marzano tomatoes and only San Marzano

tomatoes)

1 yellow onion, diced

5 cloves garlic, chopped

½ bunch parsley, chopped

1 C basil, chopped

Salt and pepper to taste

Directions:

  • Oil a large pan and place over medium high heat and add onion, cook on low for about 7-10 minutes, until very caramelized

  • Add the garlic and cook for another minute

  • Add in crushed tomato, fresh herbs and salt and pepper

  • Bring to a boil, then to a simmer and cook for 45 minutes – all day!
